Ingredients

  • 1 rice paper wrap

  • 1/3 cup shredded lettuce

  • 1/3 cup carrots cut into matchsticks

  • 1/3 cup diced seedless cucumber

  • 2 cherry tomatoes, sliced

  • 2 tbsp non-dairy cheese

  • 2 tbsp Catalina or vinaigrette dressing

Instructions

  1. Prepare rice paper wrap according to package directions.

  2. Layer salad fillings, including dressing of choice, on rice paper wrap, leaving 3 inches uncovered at top.

  3. Fold in both sides of wrap. Then, starting at the bottom, roll up tightly toward the top.
