Ingredients

  • 1/2 cup vegetable shortening

  • 1/3 cup margarine, softened

  • 2 tbsp sugar

  • 1/4 cup brown sugar, packed

  • 1 package vanilla instant pudding mix

  • 1 tsp vanilla extract

  • 1/3 cup water

  • 2 cups low-protein baking mix

  • 1 1/2 tsp baking powder

  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 375° F.

  2. In a medium bowl, mix the shortening, margarine, and both sugars until well blended.

  3. Add the pudding mix and vanilla extract, and mix well.

  4. Gradually add water as you continue mixing.

  5. Stir in the low-protein baking mix, baking powder, and salt, and thoroughly combine.

  6. Using clean hands, shape the dough into small walnut-size balls, and place on an ungreased cookie sheet.

  7. Flatten with a fork or spoon to make cookies into disc shapes.

  8. Bake for 12 minutes. Let cool before serving.
