Ingredients

1/4 of a medium zucchini

1 tbsp tomato paste

1 tsp olive oil

1 tsp balsamic vinegar

1/4 tsp dried oregano

Pinch of salt

2 tbsp Daiya® Mozzarella Style Shreds
Instructions

Preheat your oven to 350° F.

Cut the zucchini into six 1/4-inch thick rounds.

In a small bowl, whisk together the tomato paste, olive oil, balsamic vinegar, dried oregano, and salt.

Spread the mixture evenly on the zucchini rounds.

Top with the Daiya® Mozzarella Style Shreds.

Place on a baking sheet, and bake for 15 minutes or until the shreds start to melt.

Cool slightly and serve.
