Ingredients

  • 5 cups coarsely chopped seedless watermelon

  • 1/2 medium English cucumber, peeled and coarsely chopped

  • 1/2 medium yellow bell pepper, coarsely chopped

  • 1/3 cup chopped scallions, white and green portions

  • 1/4 cup fresh lime juice

  • 3 tbsp chopped fresh mint

  • 1/2 tsp salt

  • 1/2 tsp hot sauce

  • 1 small clove garlic, minced

  • 2 cups cranberry–raspberry juice

Instructions

  1. Combine all ingredients, except juice, in a large bowl and stir well. Place half of this mixture in a food processor or a blender. Pulse 4 to 6 times, until finely chopped but some texture still remains.

  2. Pour mixture into a large container. Repeat procedure with the remaining watermelon mixture. Stir in juice. Chill thoroughly before serving.
