Ingredients

1 rice paper wrap

1/3 cup shredded lettuce

1/3 cup carrots cut into matchsticks

1/3 cup diced seedless cucumber

2 cherry tomatoes, sliced

2 tbsp non-dairy cheese

2 tbsp Catalina or vinaigrette dressing
Instructions

Prepare rice paper wrap according to package directions.

Layer salad fillings, including dressing of choice, on rice paper wrap, leaving 3 inches uncovered at top.

Fold in both sides of wrap. Then, starting at the bottom, roll up tightly toward the top.
