Ingredients

  • 1 low-protein tortilla wrap

  • 2 tbsp olive oil

  • 1/2 cup chopped portobello mushrooms

  • 1/2 tsp packaged taco seasoning

  • 1 tbsp chopped onion

  • 2 cups shredded lettuce

  • 1/4 cup diced tomatoes or halved cherry tomatoes

  • 3 tbsp non-dairy cheese

  • 3 tbsp enchilada sauce, optional

Instructions

  1. Prepare tortilla by cutting it into triangle chips.

  2. Heat oil over medium heat in a large non-stick sauté pan.

  3. Brown mushrooms, seasoning, and onion in the pan on medium.

  4. Place shredded lettuce on plate, and spread cooked mushroom mixture over it evenly.

  5. Layer remaining ingredients over top, and serve with enchilada sauce or your favourite dressing.
