Salt and Pepper Jicama Fries

Everybody loves a fry! This recipe uses crunchy jicama instead of potatoes for a low-protein spin. Add a little salt and pepper and enjoy!

Ingredients

  • 1 medium-sized (about 1 1/4 lb) jicama, peeled

  • 2 tbsp olive oil, mixed with a squeeze of lime juice

  • 1 tsp coarsely ground black pepper

  • 1/2 tsp sea salt

Instructions

  1. Preheat your oven to 425° F.

  2. Peel the jicama, and slice it into thin french fry-sized sticks.

  3. On a baking sheet lined with parchment paper, toss the jicama sticks with the lime juice–olive oil mixture, pepper, and salt.

  4. Transfer to the oven, and bake for 40 minutes, stirring once halfway through. (You can also eat these raw instead of baking them!)
