  • 1/2 cup vegetable shortening

  • 1/3 cup softened margarine

  • 2 tsp granulated white sugar

  • 1/4 cup packed brown sugar

  • 1 package vanilla instant pudding

  • 1 tsp vanilla extract

  • 2 cups low-protein baking mix

  • 1 1/2 tsp baking powder

  • 1/2 tsp salt

  • 2/3 cup canned pumpkin

  • 1/4 cup mini chocolate chips

Instructions

  1. Preheat your oven to 375° F.

  2. In a medium bowl, mix the shortening, margarine, and sugars until well blended.

  3. Add the pudding mix and vanilla extract. Mix well.

  4. Stir in the low-protein baking mix, baking powder, salt, pumpkin, and chocolate chips, and thoroughly combine.

  5. Using clean hands, shape the dough into small walnut-sized balls, and place evenly on an ungreased cookie sheet.

  6. Flatten the balls with the back of a fork or spoon to make the cookies are disc shaped.

  7. Bake for 12 minutes. Let cool before serving.
