Ingredients

  • One 14-oz package coleslaw mix, without dressing

  • 2 carrots, peeled and shredded

  • 1/2 red bell pepper, very thinly sliced

  • 5 scallions, trimmed and thinly sliced

  • 1/4 cup cilantro, minced

  • 1/4 cup crushed pineapple

  • 1 tsp freshly grated ginger

  • 2 tbsp rice vinegar

  • 2 tbsp lime juice

  • 2 tbsp dark brown sugar

  • 2 tbsp vegetable oil

  • 2 tsp sesame oil

  • 2 tbsp stir-fry sauce

  • 1 tsp hot chili sauce

  • Salt and pepper, to taste

Instructions

  1. Peel and shred the carrots.

  2. Combine the coleslaw mix, carrots, and red bell pepper in a bowl.

  3. Add scallions, cilantro, and pineapple. Toss well to combine.

  4. In a small bowl or measuring cup, combine the ginger, oils, vinegar, lime juice, sugar, stir-fry sauce, and hot chili sauce. Drizzle over coleslaw, and toss well with salt and pepper.
