Ingredients

One 14-oz package coleslaw mix, without dressing

2 carrots, peeled and shredded

1/2 red bell pepper, very thinly sliced

5 scallions, trimmed and thinly sliced

1/4 cup cilantro, minced

1/4 cup crushed pineapple

1 tsp freshly grated ginger

2 tbsp rice vinegar

2 tbsp lime juice

2 tbsp dark brown sugar

2 tbsp vegetable oil

2 tsp sesame oil
-
2 tbsp stir-fry sauce

1 tsp hot chili sauce

Salt and pepper, to taste
Instructions

Peel and shred the carrots.

Combine the coleslaw mix, carrots, and red bell pepper in a bowl.

Add scallions, cilantro, and pineapple. Toss well to combine.

In a small bowl or measuring cup, combine the ginger, oils, vinegar, lime juice, sugar, stir-fry sauce, and hot chili sauce. Drizzle over coleslaw, and toss well with salt and pepper.
