Green Bean and Pear Sauté
Kick your weeknight menu up a notch! Fresh green beans, sliced pears, and a tangy dressing make this sauté a delicious addition to any meal.

Ingredients
- 1/4 cup + 3 tbsp olive oil, divided
- 1 tsp salt
- 3/4 tsp pepper
- 1 1/2 lbs green beans, trimmed and cut into 3-inch pieces
- 3 large Anjou pears, cored and cut into 24 wedges (8 wedges per pear)
- 1 tsp sugar
- 2 tbsp white wine vinegar
- 1 tsp Dijon mustard
- 1 clove garlic, minced
Instructions

In a large non-stick skillet over medium heat, add 2 tbsp olive oil, salt, and pepper. Add green beans, and toss to coat. Then sauté for 10 minutes or until tender.

Add pears to the skillet along with 1 tsp sugar and an additional 1 tbsp of olive oil. Sauté 5 minutes. Remove from heat before the pears become too soft.

In a small bowl, whisk together the vinegar, mustard, and garlic. Add 1/4 cup olive oil, whisking constantly until dressing is completely blended and has thickened. Add salt and pepper, to taste.

Pour dressing over the green bean–pear mixture, and toss gently to combine. Serve warm.
