Ingredients

1 cup So Delicious® plain coconut milk yogurt

1/4 cup non-dairy creamer

3 tbsp lemon juice

2 tbsp Vegenaise® dressing and sandwich spread

2 tsp spicy brown mustard

3/4 tsp salt

1/4 tsp pepper

1 1/4 lb broccoli stalks (no florets), peeled and shredded

1 large or 2 medium-sized carrots, shredded

1/3 cup raisins
Instructions

For dressing, combine the yogurt, non-dairy creamer, lemon juice, Vegenaise®, mustard, 3/4 tsp salt, and 1/4 tsp pepper. Whisk to mix together, and set aside.

Peel the tough outer layer of the broccoli stalks, and trim off 1/4 inch from the bottoms of the stalks. (There should be about 3/4 lb of tender broccoli stalks remaining). Use a food processor to shred the stalks and then the carrots.

Toss the shredded broccoli and shredded carrots with the dressing to combine.

Sprinkle with raisins and serve.
