Ingredients

  • Two 20 oz cans green jackfruit in brine

  • 1/2 tbsp brown sugar

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 1/2 tsp chili powder

  • 1/2 tsp salt

  • 2 tbsp oil

  • 1 cup barbecue sauce

  • 1/4 cup water

  • 8-pack of buns

  • Red onions and any other no-protein sandwich toppings you like

Instructions

  1. Rinse and drain the canned jackfruit and place it in a bowl.

  2. Add the brown sugar, smoked paprika, garlic powder, chili powder, and salt, and stir until well combined.

  3. Heat 2 tbsp of oil over medium heat in a large skillet and fry the jackfruit for 3 minutes.

  4. Add 1 cup of barbecue sauce, and reduce the heat to low.

  5. Cover and simmer for about 30 minutes, adding the 1/4 cup of water to thin out the sauce, if needed. Stir occasionally.

  6. Once the jackfruit has softened, remove it from the heat and pull it apart with 2 forks.

  7. Serve it on a bun with red onions and/or all your favourite no-protein fixings.
