A holiday classic gets a low-protein spin! Serve this for dessert and you’re sure to have a group of very thankful guests.

Ingredients

  • 4 medium apples, peeled, cored, and chopped or sliced

  • 2 tbsp butter

  • 1 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/3 cup sugar

  • 3 tbsp + 2 tbsp water, divided

  • 1 tbsp + 2 tsp cornstarch

  • 1 pint So Delicious® dairy-free vanilla frozen dessert

Instructions

  1. Peel, core, and chop or slice the apples.

  2. In a non-stick skillet over medium heat, melt the butter, cinnamon, and nutmeg. Stir in the apples, sugar, and 3 tbsp of water.

  3. Cover and cook, stirring occasionally, for 4 to 6 minutes or until the apples are very slightly softened.

  4. Meanwhile, in a small bowl, combine the cornstarch and 2 tbsp of water.

  5. While stirring the apple mixture, drizzle in the combined cornstarch and water, and continue to cook until apples are soft and mixture is thickened. Let bubble for 1 minute, and then cool completely.

  6. Serve over scoops of So Delicious® dairy-free vanilla frozen dessert. Topping can be stored in an airtight container for 2 weeks in the fridge or for 1 month in the freezer.
